Method

added removed changed
  1. Added step 1:

    Heat the oven to 175 °C and grease a baking dish of about 23 × 23 cm (or 20 × 30 cm).

    2 min
  2. Added step 2:

Fry the bacon until crisp and keep its fat.

    10 min
  3. Added step 3:

Melt the butter. Beat the eggs in a bowl and stir in the evaporated milk, melted butter, salt, pepper and marjoram.

    4 min
  4. Added step 4:

Peel the potatoes and onion and grate them finely (or use a food processor) into a large bowl, adding a little onion every few potatoes; it helps keep them from turning grey. Don't drain off the liquid.

    20 min
  5. Added step 5:

Working quickly, stir the bacon and about 4 tbsp of its fat into the potatoes, then the egg mixture. Mix well.

    3 min
  6. Added step 6:

Pour into the dish and smooth the top.

    1 min
  7. Added step 7:

Bake for about 90 minutes, until deep golden and crisp on top and set in the middle.

    1 h 30 min
  8. Added step 8:

Let it rest for 10 minutes so it slices cleanly.

    10 min
  9. Added step 9:

Cut into squares and serve with sour cream, or applesauce if you like. Leftovers are best sliced thin and fried in butter.
