Cut the chicken1 into eight pieces, if your butcher hasn't.
10 minChop the onions2. Heat the oil5 tbsp in a wide pan and sauté them for 3–4 minutes until they turn pale yellow.
7 min Can start right awayAdd the chicken, peppercorns6, salt1 tsp and paprika3 tbsp and stir quickly. It is a lot of paprika, but sweet paprika is not hot. Straight away add just enough water to cover the meat.
3 min After steps 1 & 2Simmer over low heat. Don't let it boil.
10 min Hands-offIf using, add the peppers and carrot1.
1 minKeep simmering until the chicken is tender, stirring now and then and adding water only very sparingly. For the last 15 minutes add no more water, so the sauce cooks down to about half a finger's depth.
40 min Hands-offStir the sour cream240 ml and heavy cream80 ml into the sauce and top with chopped parsley1 handful.
