French Toast
Day-old bread soaked in vanilla and cinnamon custard, then fried in butter until crisp outside and soft in the middle. Brioche or challah make it extra rich. Adapted from “French Toast” in the Wikibooks Cookbook (CC BY-SA 4.0). Scaled to 2 servings (2 eggs for 4 slices) and gave set amounts for the vanilla, cinnamon, sugar and butter; the pepper is left out. Whisk the eggs2, milk120 ml, vanilla, cinnamon½ tsp, sugar1 tsp and salt1 pinch in a shallow dish until no streaks of egg white remain.
3 minHeat a frying pan over medium-low heat and melt half the butter in it.
3 min Hands-off Can start right awayDip each slice of bread in the egg mixture, turning once, until coated and a little soaked. Soft bread needs only a quick dip; sturdy bread can soak a few seconds longer.
3 min After step 1Fry the slices for 3–4 minutes per side until both sides are browned and the middle is cooked through. Work in two batches if needed, adding the rest of the butter. Too much heat scorches the outside before the inside sets.
8 min After steps 2 & 3Serve hot, dusted with powdered sugar, with strawberries and maple syrup.
